Coconut Chocolate-Covered Strawberries
For anyone who loves chocolate covered food, this recipe is great for Valentine's Day, a birthday, or just a sweet snack.

- 16 oz fresh strawberries
- 12 oz chocolate chips (dark or semisweet)
- ½ cup coconut shavings
- 3 sprigs mint (optional)
First, ensure that the strawberries are sufficiently dry. Then, make your own double-boiler system by pouring water into a pot until it is about ¼ full and then put a completely-dry glass mixing bowl on top of the pot (make sure the bowl doesn’t touch the water). Add the chocolate chips to the bowl and turn the stove onto low-medium heat. Constantly stir the chocolate chips with a spatula until melted.
Once chocolate is melted, hold each strawberry by the stem and dip it into the chocolate, slowly pulling it out with a twisting motion. Place on wax paper. Once each strawberry is chocolate-covered, sprinkle with coconut shavings and let chocolate harden at room temperature. After hardening, transfer to a serving dish and can garnish with mint.
Most recipes try to complicate the chocolate by putting in butter, cream, oil, etc., but I've found that this usually messes it up. No need to add anything for perfectly melted chocolate.
Some recipes advocate for having the chocolate harden in the refrigerator but this causes little perspiration drops to form on the outside. So if room temperature isn't too hot, I'd recommend just having them harden that way.
