Cuisine Mexican
- 1 lb raw shrimp
- 2 Roma tomatoes chopped
- ½ large red onion diced
- 10 limes juiced
- 1 jalapeño pepper minced
- 1 avocado cubed
- 1 tsp cumin
- ½ tsp sea salt
- 1 tsp black pepper
- 1 bunch cilantro chopped
- Tortilla chips or tostadas
Start by peeling and deveining the shrimp, removing tails and cutting each shrimp into about 4-6 pieces. In a bowl, combine the shrimp and lime juice, making sure the shrimp are all submerged. Let rest for at least 1.5 hours.
Meanwhile in another bowl, combine the tomatoes, onion, jalapeño pepper, cilantro, cumin, and salt/pepper. After the shrimp has turned completely from gray to pink, pour the shrimp/lime into the other bowl, add avocado, and gently mix to combine.
Serve chilled or room temperature with chips or tostadas.
