Coconut Macadamia Nut-Crusted Salmon

Ingredients
  

  • 1.5 lbs salmon fillet
  • ½ cup macadamia nuts
  • ½ cup panko bread crumbs
  • ¼ cup coconut flakes
  • 1 tbsp dried parsley
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 2 tbsp butter melted

Instructions
 

  • Preheat oven to 375 degrees. Pat salmon fillets dry, coat with olive oil, and place on a foil-lined baking sheet.
  • In a food processor, add macadamia nuts, panko, parsley, salt, and pepper. Process until a coarse mixture. Mix in melted butter and parsley.
  • Spoon this mixture over the salmon and cook in oven for 20 minutes (depending on the thickness of your salmon) or until fish easily flakes.
