In a bowl, combine beaten eggs with salt, pepper, cumin, and arugula. Heat up a flat pan on medium-high heat with olive oil and place the egg rings in it. Pour some egg mixture into each egg ring (up to the indentatioand let cook for about 2 minutes (we found it best to cover the egg rings with a cutting board so it steams them too. After a minute and when the top is almost set, flip them over and cook for about 20 seconds on the opposite side or until completely cooked through.
Meanwhile, toast the English muffins and heat the Canadian bacon on the stove in a pan without oil. When ready and the eggs are still warm, construct Mcmuffins by placing and egg circle on the English muffin, then cheese, then arugula, then the English muffin top.
