Combine all marinade ingredients. Thread chicken onto skewers and place in a baking dish. Pour over marinade and coat evenly. Let marinate in the fridge for at least an hour.
After marinating, oil grill grates, preheat grill on medium-high heat, and then grill the skewers for about 10-15 minutes or until no longer pink inside.
Sauce
Meanwhile, make peanut dipping sauce by combining all ingredients except peanuts in a small bowl and mixing thoroughly (you can add more peanut butter or water to get desired consistency).
Bring a small pan to medium heat on the stove (without oil) and add peanuts. Toast for about 2 minutes or until slightly browned. Top the sauce with these peanuts.
