First, poke holes in the potatoes with a fork and microwave for 5-10 minutes (or until soft), turning once. When finished, cut them into small cubes. Optional: to give them a char, you can briefly broil them on a foil-lined baking sheet for about 2 minutes (keep an eye on them so they don’t burn!).
Meanwhile, in a large pan on medium heat, sauté the sliced sausage and garlic with some olive oil until slightly browned and set aside. In the same pan, add some olive oil the eggs, turmeric, and black pepper. When the eggs are almost cooked through, add salt to taste.
To construct the burritos, warm the tortillas either in the microwave or a slightly-warm oven. One at a time, add potatoes, eggs, sausage, and arugula to the center of the tortilla (leaving space on the sides).
Roll it up by folding both sides inward and then rolling it away from you. To seal the tortillas, we briefly pressed them down onto a cast iron grill pan and then wrapped each one in foil to make it an easy on-the-go breakfast.
