Preheat the oven to 425 degrees. Toss kale with a bit of olive oil and bake on a foil-lined baking sheet for about 15 minutes or until crispy. Meanwhile, prepare the remaining salad ingredients. Make the dressing by combining all ingredients and mixing until combined.
When the kale is ready, add it to a large bowl along with the kale, followed by the remaining salad ingredients. Pour over however much dressing you prefer, toss, and serve.
