Double Dark Chocolate Oatmeal Cookies

These rich and decadent oatmeal cookies combine cocoa powder with dark chocolate chips

Ingredients
  

  • ½ cup butter room temp
  • ¼ cup honey
  • ¾ cup light brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup dark chocolate chips
  • ½ cup all-purpose flour
  • cup unsweetened cocoa powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1.5 cups old-fashioned oats

Instructions
 

  • Preheat oven to 325 degrees. In one large bowl, combine the butter, honey, and sugar and beat with a mixer for about 2 minutes or until soft peaks. Add the egg and vanilla extract and mix for another minute.
  • Sift the flour, baking soda, and cocoa powder into another large bowl and add salt. Add the dry ingredients to the wet ingredients and mix until combined. Add the oats and chocolate chips and gently fold in until combined.
  • Line a baking sheet with wax paper and coat with a small layer of butter or oil. Use a large spoon or small ice cream scoop to scoop dollops of cookie dough onto the wax paper and use the back of the spoon to flatten them out into circles.
  • Bake in oven for 10-13 minutes (depending on desired crispiness). When finished, immediately and carefully remove from wax paper (to prevent stickinand let cool at room temperature. You can serve them with a glass of milk.
