Shrimp
- 1 lb shrimp peeled and deveined
- 2 tsp garam masala
- 1 tsp turmeric
- ½ cup cashews
- 3 cloves garlic minced
- 2 tsp ginger minced
- 1 tbsp butter
- 8 oz cremini mushrooms sliced
- 2 red onions thinly sliced
- 1 bunch cilantro stems minced and leaves chopped
Rice
- 1.5 cups basmati rice
- 1 cinnamon stick
- 2 tsp turmeric
First, cook rice according to package instructions but add a cinnamon stick and turmeric.
Meanwhile, saute mushrooms in a pan with oil until golden and set aside. In the same pan on medium-high heat with some oil, add garlic, ginger, onion, turmeric, garam masala, diced cilantro stems, and cashews. Saute for a few minutes and then add shrimp.
Preheat oven to 425 degrees. Cook until shrimp are cooked through, take off the heat, add the mushrooms from before, and stir in butter. In an oven-safe bowl or pan, layer the rice with the shrimp mixture, cook in oven for about 10 minutes.
Top with chopped cilantro leaves and serve warm.
