Turkey, Beef, & Roasted Kale Tacos

These healthy, flavorful, and vibrant tacos are a must-have for your next Taco Tuesday!

Ingredients
  

  • 15 small tortillas
  • 1 lb ground beef
  • 1 lb ground turkey
  • 1 large bag kale
  • 1 red onion sliced
  • 2 bell peppers diced
  • 2 avocados cubed and tossed with lime
  • 1 bunch cilantro chopped
  • 3 limes
  • 4 cloves garlic minced
  • 2 tsp paprika
  • 3 tsp cumin
  • 2 tsp dried oregano
  • 2 tsp chili powder
  • Salt/pepper to taste
  • Salsa

Instructions
 

  • Preheat oven to 425 degrees and roast kale for ~25 minutes or until crispy, turning once halfway through cooking.
  • Meanwhile, in a large skillet on medium-high heat, start cooking the turkey and beef. Once most of the liquid has evaporated, add all of the spices listed and continue cooking for another few minutes.
  • Set the meat aside and in the same skillet, saute the onion, bell pepper, and garlic in olive oil with salt/pepper until golden.
  • Toast the tortillas either in a toaster oven or broiler until crispy.
  • Now it’s time to assemble the tacos. Lay out a tortilla and place some kale, then meat, then sauteed veggies, then avocado, and finally, top with cilantro and lime. Serve with salsa.
