Turkey, Beef, & Roasted Kale Tacos

- 15 small tortillas
- 1 lb ground beef
- 1 lb ground turkey
- 1 large bag kale
- 1 red onion sliced
- 2 bell peppers diced
- 2 avocados cubed and tossed with lime
- 1 bunch cilantro chopped
- 3 limes
- 4 cloves garlic minced
- 2 tsp paprika
- 3 tsp cumin
- 2 tsp dried oregano
- 2 tsp chili powder
- Salt/pepper to taste
- Salsa
Preheat oven to 425 degrees and roast kale for ~25 minutes or until crispy, turning once halfway through cooking.
Meanwhile, in a large skillet on medium-high heat, start cooking the turkey and beef. Once most of the liquid has evaporated, add all of the spices listed and continue cooking for another few minutes.
Set the meat aside and in the same skillet, saute the onion, bell pepper, and garlic in olive oil with salt/pepper until golden.
Toast the tortillas either in a toaster oven or broiler until crispy.
Now it’s time to assemble the tacos. Lay out a tortilla and place some kale, then meat, then sauteed veggies, then avocado, and finally, top with cilantro and lime. Serve with salsa.
