Ye'abesha Gomen (Ethiopian Collard Greens)
Ye'abesha Gomen is a traditional vegetarian Ethiopian dish made by sauteing collard greens with garlic, ginger, and an aromatic infused oil.

- 1 green bell pepper minced
- ½ bunch green onions sliced
- 1 onion minced
- 1 bag collard greens
- ½ jalapeno pepper seeds removed
- 1 tbsp garlic paste
- 1 tbsp ginger paste
In a large pan on medium heat, add infused oil, then 1 tbsp each of garlic & ginger paste. Saute for a minute before adding the bell pepper and onions, then green onions and jalapeno pepper.Saute for about 5 minutes and then stir in collard greens, in increments, until all the collard greens have reduced by about half.Serve warm or room temperature.
