Goat Cheese, Egg, & Asparagus Tart

- 1 roll puff pastry dough
- 1 bunch asparagus
- ½ cup goat cheese
- ¼ cup Parmesan cheese
- 3 eggs
- garlic salt
- dried parsley for garnish
Preheat oven to 400 degrees.
Roll out puff pastry dough so that the width is slightly larger than the length of asparagus. With a knife, score a rectangle in the dough to create a crust (but don’t cut all the way through). Place on a baking sheet. Brush the outer edges with either melted butter or an egg wash.
Place in oven for 10 minutes and meanwhile wash and trim asparagus. Toss asparagus with some oil and garlic salt and cook separate from pastry dough for 10 minutes.
Add goat cheese to the inside rectangle of the pastry dough, then asparagus, then Parmesan cheese. Crack over three eggs and then top with some pepper.
Cook in oven for about 20 minutes or until egg whites are cooked through. Sprinkle over some parsley for garnish.
