Goat Cheese, Egg, & Asparagus Tart

Ingredients
  

  • 1 roll puff pastry dough
  • 1 bunch asparagus
  • ½ cup goat cheese
  • ¼ cup Parmesan cheese
  • 3 eggs
  • garlic salt
  • dried parsley for garnish

Instructions
 

  • Preheat oven to 400 degrees.
  • Roll out puff pastry dough so that the width is slightly larger than the length of asparagus. With a knife, score a rectangle in the dough to create a crust (but don’t cut all the way through). Place on a baking sheet. Brush the outer edges with either melted butter or an egg wash.
  • Place in oven for 10 minutes and meanwhile wash and trim asparagus. Toss asparagus with some oil and garlic salt and cook separate from pastry dough for 10 minutes.
  • Add goat cheese to the inside rectangle of the pastry dough, then asparagus, then Parmesan cheese. Crack over three eggs and then top with some pepper.
  • Cook in oven for about 20 minutes or until egg whites are cooked through. Sprinkle over some parsley for garnish.
