Gorgonzola Parmesan Sweet Potato Fries

Made in an air fryer, these sweet potato fries are perfectly crispy on the outside and chewy on the inside.

Ingredients
  

Sweet Potato Fries

  • 2 large sweet potatoes
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • ½ tsp cayenne pepper
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tbsp gorgonzola crumbled
  • 1 tbsp Parmesan cheese finely grated
  • ¼ bunch cilantro chopped

Spicy Mayo Sauce

  • 1.5 tbsp Sriracha
  • 2 tbsp sour cream

Instructions
 

  • First, you can peel potatoes (optional). Then, cut them in half and cut longitudinally into fries. Preheat air fryer to 375 degrees. Toss them with spices and 2 tsp oil in a large bowl.
  • Air fry for 14-18 minutes, flipping twice, until desired crispiness.
  • After taking them out, immediately top with crumbled gorgonzola and grated Parmesan to let them melt from the residual heat. Then top with chopped cilantro.
  • Can serve with spicy mayo sauce (just mix the sriracha and sour cream until combined).
