Air Fryer Zucchini Chips
Perfect for a light summer afternoon snack, these healthy vegetable chips are nice and crispy.

- 2 zucchinis
- 1 egg
- 2 tbsp flour
- ½ cup panko bread crumbs
- ¼ cup Parmesan cheese shredded
- ½ tsp baking powder
- Salt/pepper to taste
- 1 tsp thyme
Slice zucchinis thinly and diagonally. Pat them dry with a paper towel.
Crack an egg into a bowl and whisk. In another egg, combine flour, panko, Parmesan, baking powder, and salt/pepper.
Dip zucchini slices into egg wash and then into dry ingredients, making sure to coat. Set them aside on a pan until ready.
Once ready, preheat air fryer to 375 degrees and place down zucchini (can do it in batches to avoid them overlapping much). Give a quick spray of oil. Cook for 10-12 minutes, flipping and re-spraying with oil once.
Serve with your favorite dipping sauce (we did it with spicy mayo).
