Seared Ahi Tuna Salad with Soy Ginger Dressing

Ingredients
  

Salad

  • 3 cups mixed salad greens
  • 3 cups kale
  • ½ lb ahi tuna sashimi grade
  • 2 tbsp black sesame seeds
  • 2 tbsp white sesame seeds
  • 1 tbsp pine nuts lightly toasted
  • 1 tbsp pistachios
  • 1 avocado sliced
  • 1 Roma tomato chopped
  • 1 bunch green onions sliced

Dressing

  • Juice from 1 lime
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tsp ground ginger
  • ½ tsp red pepper flakes

Instructions
 

  • Preheat oven to 425 degrees. Toss kale with some oil and roast in oven for about 15 minutes or until crispy, flipping once.
  • Meanwhile, season tuna with some salt and pepper. Mix together white and black sesame seeds on a plate and coat the tuna. Preheat a cast iron skillet on the stove until hot. Sear tuna for about 2 minutes per side, so that it is still rare on the inside (but cook through if not sashimi grade tuna).
  • Place salad greens and roasted kale in a serving bowl and add remaining salad ingredients.
  • Whisk together all dressing ingredients and drizzle over salad.
