Oatmeal Chocolate Chip Sweet Potato Cookies

Oatmeal chocolate chip cookies are my favorite! This recipe uses sweet potatoes for a unique gooey texture on the inside but still crunchy on the outside.

Ingredients
  

  • 2 sweet potatoes
  • 2 cups oats
  • 2 cups all-purpose flour
  • 1.5 cups chocolate chips
  • ½ cup brown sugar
  • ¼ cup white sugar
  • ¼ cup honey
  • ½ tsp salt
  • 1 stick butter unsalted
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • ½ tsp nutmeg
  • ½ tsp cloves

Instructions
 

  • First, peel sweet potatoes, roughly chop into cubes, and boil on stove for about 15 minutes or until tender. Remove sweet potato chunks, mash, and set aside.
  • Preheat oven to 350 degrees.
  • In one bowl, mix together the butter, white/brown sugar, honey, egg, and vanilla extract. In another bowl, combine the flour, oats, salt, and spices.
  • Combine wet ingredients (including mashed sweet potato) with dry ingredients in your largest bowl and fold in chocolate chips.
  • On a parchment paper-lined baking sheet, scoop equally-sized dollops of dough (we used an ice cream scoop to make them even) and bake for about 12 minutes.
