Oatmeal Chocolate Chip Sweet Potato Cookies
Oatmeal chocolate chip cookies are my favorite! This recipe uses sweet potatoes for a unique gooey texture on the inside but still crunchy on the outside.

- 2 sweet potatoes
- 2 cups oats
- 2 cups all-purpose flour
- 1.5 cups chocolate chips
- ½ cup brown sugar
- ¼ cup white sugar
- ¼ cup honey
- ½ tsp salt
- 1 stick butter unsalted
- 1 egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- 2 tsp cinnamon
- 1 tsp ground ginger
- ½ tsp nutmeg
- ½ tsp cloves
First, peel sweet potatoes, roughly chop into cubes, and boil on stove for about 15 minutes or until tender. Remove sweet potato chunks, mash, and set aside.
Preheat oven to 350 degrees.
In one bowl, mix together the butter, white/brown sugar, honey, egg, and vanilla extract. In another bowl, combine the flour, oats, salt, and spices.
Combine wet ingredients (including mashed sweet potato) with dry ingredients in your largest bowl and fold in chocolate chips.
On a parchment paper-lined baking sheet, scoop equally-sized dollops of dough (we used an ice cream scoop to make them even) and bake for about 12 minutes.
