Thai Peanut Noodles with Shrimp

Ingredients
  

  • 1 packages rice noodles
  • 1 lb shrimp peeled and deveined
  • ½ tsp garlic salt
  • ¼ can coconut milk
  • 4 tbsp peanut butter creamy or crunchy
  • 2 tbsp soy sauce
  • ½ lime juiced
  • 1 bunch green onions sliced diagonally
  • 1 Fresno pepper sliced diagonally and deseeded
  • ½ tsp sesame seeds

Instructions
 

  • First, cook rice noodles according to package instructions. Saute shrimp with garlic salt and some oil on medium heat for a few minutes until no longer translucent.
  • In a small bowl, whisk the coconut milk, peanut butter, soy sauce, and lime juice until combined.
  • In a large bowl, toss the noodles and shrimp with peanut sauce. Top with green onions, sesame seeds, and sliced pepper.
  • Serve warm.
