Ingredients
  

  • 1 container Bitchin’ Sauce
  • 1 container spring mix
  • 1.5 cups wild rice cooked
  • 1 cup manzanita olives
  • 1 cup cherry tomatoes
  • ½ onion sliced
  • ½ cup shredded carrot
  • ¼ cup sundried tomatoes chopped
  • 1 8 oz container cremini mushrooms chopped
  • 2 cloves garlic
  • 1 tbsp sherry

Instructions
 

  • Saute sliced onions in a pan with olive oil on medium-low heat until golden and set aside. Now, saute the mushrooms and when they have turned golden, add garlic and saute for 2 extra minutes before deglazing the pan with a splash of sherry for another minute.
  • Place a bed of spring mix in two bowls (or one large serving bowl if you prefer). Arranging ingredients in a circle around the perimeter, add a scoop of rice, the olives, cherry tomatoes, onion, mushrooms, carrot, and sundried tomatoes. Finally, add a large dollop of Bitchin’ Sauce which will serve as a creamy salad dressing.
