- 1 container Bitchin’ Sauce
- 1 container spring mix
- 1.5 cups wild rice cooked
- 1 cup manzanita olives
- 1 cup cherry tomatoes
- ½ onion sliced
- ½ cup shredded carrot
- ¼ cup sundried tomatoes chopped
- 1 8 oz container cremini mushrooms chopped
- 2 cloves garlic
- 1 tbsp sherry
Saute sliced onions in a pan with olive oil on medium-low heat until golden and set aside. Now, saute the mushrooms and when they have turned golden, add garlic and saute for 2 extra minutes before deglazing the pan with a splash of sherry for another minute.
Place a bed of spring mix in two bowls (or one large serving bowl if you prefer). Arranging ingredients in a circle around the perimeter, add a scoop of rice, the olives, cherry tomatoes, onion, mushrooms, carrot, and sundried tomatoes. Finally, add a large dollop of Bitchin’ Sauce which will serve as a creamy salad dressing.
