Bruschetta Topped with Feta

Ingredients
  

  • 1 cup heirloom tomatoes chopped
  • 5 leaves basil
  • 1 clove garlic
  • 2 tsp olive oil
  • ¼ tsp salt
  • ½ tsp black pepper
  • 1 tbsp feta cheese
  • Your favorite type of bread

Instructions
 

  • Roughly chop tomatoes and use a paper towel to strain out some water. Roll together basil and chop into thin strips (chiffonade). Mince garlic.
  • Combine the tomatoes, basil, and garlic in a bowl with salt, pepper, and olive oil. Toast bread, add tomato bruschetta, and sprinkle over the feta.

Notes

The feta adds an interesting twist to this bruschetta recipe.
