One Pot Healthy Breakfast Hash

A simple one pot recipe, this meal combines creamy goat cheese with sausage and plenty of veggies. A great way to start the day!

Ingredients
  

  • 4 medium yellow potatoes cut into small cubes
  • 1 red bell pepper diced
  • 1 large zucchini diced
  • 1 large onion diced
  • 1 fresno pepper sliced
  • 3 cloves garlic
  • 3 sausages halved and sliced
  • 8 oz plain goat cheese
  • 1 bunch cilantro
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions
 

  • In a cast iron skillet on medium heat, first cook the sausage until cooked through and crispy, about 8 minutes. Set aside.
  • In the same skillet, saute the potatoes until cooked through and crispy, about 8 minutes. Set aside.
  • Next, saute the onions, fresno pepper, and zucchini for about 5 minutes. Add the garlic, cumin, and paprika and saute for another 3 minutes. Season with salt and pepper, to taste.
  • Now, combine the sausage and potatoes with the onions and zucchini and saute together for 3 more minutes.
  • Finally, serve in a bowl, sprinkled with goat cheese and cilantro. Serve warm.
