One Pot Healthy Breakfast Hash

A simple one pot recipe, this meal combines creamy goat cheese with sausage and plenty of veggies. A great way to start the day!

- 4 medium yellow potatoes cut into small cubes
- 1 red bell pepper diced
- 1 large zucchini diced
- 1 large onion diced
- 1 fresno pepper sliced
- 3 cloves garlic
- 3 sausages halved and sliced
- 8 oz plain goat cheese
- 1 bunch cilantro
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
In a cast iron skillet on medium heat, first cook the sausage until cooked through and crispy, about 8 minutes. Set aside.
In the same skillet, saute the potatoes until cooked through and crispy, about 8 minutes. Set aside.
Next, saute the onions, fresno pepper, and zucchini for about 5 minutes. Add the garlic, cumin, and paprika and saute for another 3 minutes. Season with salt and pepper, to taste.
Now, combine the sausage and potatoes with the onions and zucchini and saute together for 3 more minutes.
Finally, serve in a bowl, sprinkled with goat cheese and cilantro. Serve warm.
