Strawberry-Infused Black Bean Brownies
Rich, chocolately, healthy treats. Trust us, they are as good as the real thing.
- 3 cups strawberries sliced
- 1.5 cups dark chocolate chips
- 2 cans black beans
- 4 tbsp cocoa powder
- 1 cup quick oats
- 1/2 tsp salt
- 1/3 cup honey
- 1/4 cup white sugar
- 3 tsp vanilla extract
- 1 tsp baking powder
- 1/3 cup vegetable oil
- 2 eggs
Preheat oven to 350 degrees. Reduce the strawberries with 1 tbsp water and 1 tsp sugar until partially broken down. In a large bowl, combine all ingredients except the chocolate chips and strawberries. Use an immersion blender to thoroughly mix until homogenous (you can alternatively use a blender or large food processor but make sure that it can thoroughly blend mixture).
Now fold in chocolate chips. Spoon half of the batter onto a greased baking pan, add half of the strawberry mixture, and top with the remaining brownie batter. Cook in oven for about 25-30 minutes or until a knife comes out clean. Top with the remaining strawberries and serve warm or room temperature.
