Sun-Dried Tomato Hummus

A creamy garlicky spread.

Ingredients
  

  • 1 can chickpeas aka garbanzo beans
  • 1/4 cup tahini
  • 1/2 cup canned sundried tomatoes
  • 1/2 lemon juiced
  • 1 tsp cumin
  • 1/2 tsp salt
  • 2 cloves garlic

Instructions
 

  • Sauté garlic in olive oil until golden and let cool. In a food processor, add remaining ingredients and start blending. Add 2 tbsp olive oil and continue blending. Add about 2 tbsp water or until it reaches desired consistency. Can serve topped with thyme.
