Cook quinoa according to instructions. On medium heat in a large pan, sauté garlic in olive oil and when it starts to turn golden, add ground turkey and the spices. Meanwhile, in another pan, heat the black beans. Keep cooking ground turkey until it starts to brown and mix in with the cooked quinoa.
When everything is ready, throw the tortillas in the oven at low temperature to warm them. Create tacos by adding turkey/quinoa to the tortillas, then corn/beans, then salsa/avocado, then cotija/cilantro.
