Bruschetta with Melted Brie
A light but filling snack with fresh tomatoes and warm creamy brie.

- 1 cup heirloom tomatoes chopped
- 5 leaves basil
- A few slices brie
- 1 clove garlic
- 2 tsp olive oil
- ¼ tsp salt
- ½ tsp Italian herbs
- Your favorite type of bread
Roughly chop tomatoes and use a paper towel to strain out some water. Roll together basil and chop into thin strips (chiffonade).
Combine the tomatoes, basil, and garlic in a bowl with salt, Italian herbs, and olive oil. Add a few slices of brie to the bread and place in a toaster oven (or broil) until golden and slightly melted.
Spoon tomato bruschetta mixture over the brie toast. You can garnish with extra basil leaves.
