A light but filling snack with fresh tomatoes and warm creamy brie.

Ingredients

  

  • 1 cup heirloom tomatoes chopped
  • 5 leaves basil
  • A few slices brie
  • 1 clove garlic
  • 2 tsp olive oil
  • ¼ tsp salt
  • ½ tsp Italian herbs
  • Your favorite type of bread

Instructions

 

  • Roughly chop tomatoes and use a paper towel to strain out some water. Roll together basil and chop into thin strips (chiffonade).
  • Combine the tomatoes, basil, and garlic in a bowl with salt, Italian herbs, and olive oil. Add a few slices of brie to the bread and place in a toaster oven (or broil) until golden and slightly melted.
  • Spoon tomato bruschetta mixture over the brie toast. You can garnish with extra basil leaves.
