Roasted Spaghetti Squash with Feta & Tomatoes

Roasted Spaghetti Squash Recipe

Zoe had found a similar spaghetti squash recipe on Tik Tok and tried it out. It turned out amazing so we decided to add our own twist to it, especially by adding ground meat for an extra savory kick.

This spaghetti squash recipe is very simple and only requires a few key ingredients:

  • Spaghetti Squash
  • Feta
  • Cherry Tomatoes
  • Ground meat

It’s also quick and easy to make too and requires minimal cleanup! The prep work only takes about 5 minutes total. Then you bake it for about 45 minutes. Then all you have to do is tear apart the spaghetti squash flesh into tendrils with a fork, add the cooked ground meat, and its ready to eat!

Variations on this Roasted Spaghetti Squash Recipe

We know that people like to make their own substitutions to give it their own spin. If so, let us know your tips and how it turned out in the comments below. Here are a few variations you can try out:

  • If you want to keep this dish vegetarian, just don’t add the ground meat at the end
  • If you do prefer meat, it’s up to you which type. You can try either ground beef, pork, or turkey (just note that you might need to add some extra seasoning if you use turkey).
  • Some recipes call for roasting the squash completely separately from the tomatoes and feta. While you can do this, we found that it is easiest just to use the spaghetti squash skin as its own cooking dish. Less things to clean up and all the flavors blend together perfectly.
  • We used garlic salt rather than regular salt but you can use either!
  • One last tip- make sure to tear apart the squash flesh into tendrils soon after it comes out of the oven. If you wait too long then it will be much harder to do.

Ingredients

  

  • 2 Spaghetti squash
  • 2 7 oz blocks feta
  • 3-4 cups cups cherry tomatoes halved
  • 1 lb ground meat turkey, beef, pork, etc.
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

 

  • Preheat oven to 400 degrees.
  • Slice each squash in half, lengthwise, and place, cut-side-up on a foil-lined baking sheet. Use a large spoon to scoop out the part with seeds (but leave the rest intact).
  • In the hole created in each squash, place ½ of the feta block as enough cherry tomatoes to fill to the top. Drizzle each with some olive oil and add a pinch of salt/pepper.
  • Bake for about 45-50 minutes. Meanwhile, cook the ground meat on the stovetop on medium heat with oregano and some salt/pepper until cooked through and slightly crispy.
  • When the squash is ready, use two forks to pull apart the squash into spaghetti-like tendrils, mixing with the feta and tomatoes. Add the meat at this step too and serve warm.
