Bring a pot of water to boil and preheat oven to 450 degrees. Meanwhile, use a sturdy vegetable peeler to peel the yucca and use a sharp knife to cut yucca into fry-shaped wedges or strips.
Carefully place fries into boiling water, letting them boil for 10 minutes or until the edges start to come apart. At this point, remove fries from water and dry with a kitchen towel.
Once dried, place fries into a large bowl, adding some olive oil, salt/pepper, and Cajun seasoning. Transfer fries to a baking sheet and bake for 30 minutes, flipping them over halfway through.
Once golden, remove from oven and sprinkle over the juice of a lime. Serve warm.

We like to dip our fries in our version of spicy mayo (equal parts Greek yogurt and sriracha sauce).
