Cajun Yucca Fries

This recipe calls for Yucca (aka cassava) which is baked into healthy, delicious fries.

Ingredients

  

  • 2 yucca roots
  • 2 tsp Cajun seasoning
  • 1 lime
  • 1/2 tsp salt
  • 1 tsp black pepper

Instructions

 

  • Bring a pot of water to boil and preheat oven to 450 degrees. Meanwhile, use a sturdy vegetable peeler to peel the yucca and use a sharp knife to cut yucca into fry-shaped wedges or strips.
  • Carefully place fries into boiling water, letting them boil for 10 minutes or until the edges start to come apart. At this point, remove fries from water and dry with a kitchen towel.
  • Once dried, place fries into a large bowl, adding some olive oil, salt/pepper, and Cajun seasoning. Transfer fries to a baking sheet and bake for 30 minutes, flipping them over halfway through.
  • Once golden, remove from oven and sprinkle over the juice of a lime. Serve warm.

Notes

We like to dip our fries in our version of spicy mayo (equal parts Greek yogurt and sriracha sauce).

Fun fact: Yucca (aka yuca aka cassava) is what tapioca is made from!
