Cheddar-Topped Open-Faced Tuna Sandwiches
An easy-to-make but gourmet take on the traditional tuna melt. A great lunch-time meal prep idea.

- 1 loaf rustic bread thickly sliced
- 3 5oz cans tuna
- 1 tbsp capers
- ¼ cup almonds sliced
- 2 cloves garlic minced
- ½ bunch green onions chopped
- ½ onion chopped
- 2 tsp sriracha sauce
- 2 tbsp mayonnaise
- 2/3 cup mozzarella shredded
- ½ cup cheddar cheese shredded
- 1 pinch cayenne pepper
Brush each side of bread with olive oil and broil each side until golden. Thoroughly drain the tuna and combine in a bowl with capers, almonds, garlic, green onions, onion, sriracha, mayonnaise, and mozzarella. Mix with a spoon and carefully spoon on to each slice of bread, lightly packing mixture down and making sure the edges are covered.
Top with cheddar cheese and cayenne pepper. Broil for a few minutes until cheddar cheese is bubbling and golden.
