Cheddar-Topped Open-Faced Tuna Sandwiches

An easy-to-make but gourmet take on the traditional tuna melt. A great lunch-time meal prep idea.

Ingredients

  

  • 1 loaf rustic bread thickly sliced
  • 3 5oz cans tuna
  • 1 tbsp capers
  • ¼ cup almonds sliced
  • 2 cloves garlic minced
  • ½ bunch green onions chopped
  • ½ onion chopped
  • 2 tsp sriracha sauce
  • 2 tbsp mayonnaise
  • 2/3 cup mozzarella shredded
  • ½ cup cheddar cheese shredded
  • 1 pinch cayenne pepper

Instructions

 

  • Brush each side of bread with olive oil and broil each side until golden. Thoroughly drain the tuna and combine in a bowl with capers, almonds, garlic, green onions, onion, sriracha, mayonnaise, and mozzarella. Mix with a spoon and carefully spoon on to each slice of bread, lightly packing mixture down and making sure the edges are covered.
  • Top with cheddar cheese and cayenne pepper. Broil for a few minutes until cheddar cheese is bubbling and golden.
