Silky Sweet Potato Pie Topped with Pecans

- 4 medium sweet potatoes
- 4 tbsp butter
- 2 eggs
- ½ cup milk
- ¾ cup brown sugar
- 3 tbsp honey
- 1 tsp vanilla extract
- ½ tsp salt
- ¼ tsp nutmeg
- ¼ tsp allspice
- ½ tsp cinnamon
- 1/4 tsp ginger
- ¼ cup pecans
- 1 9- inch pie crust unbaked
Poke a few holes in the sweet potatoes with a fork and cook them in the oven at 350 degrees for 1 hour. Let them sit for at least 15 minutes to cool and then remove/discard the skin. Mash the pulp in a large bowl. In this bowl, add butter, eggs, milk, sugar, honey, vanilla, and spices. Use an immersion blender or beater to mix the filling until smooth.
Pour this mixture into the pie crust and sprinkle some more cinnamon over the top. Line with pecans and bake in oven at 350 degrees for about 1 hour or until a toothpick comes out clean.
