Silky Sweet Potato Pie Topped with Pecans

For those who love pumpkin pie but are up for a twist, this recipe is for you!

Ingredients

  

  • 4 medium sweet potatoes
  • 4 tbsp butter
  • 2 eggs
  • ½ cup milk
  • ¾ cup brown sugar
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • ½ tsp salt
  • ¼ tsp nutmeg
  • ¼ tsp allspice
  • ½ tsp cinnamon
  • 1/4 tsp ginger
  • ¼ cup pecans
  • 1 9- inch pie crust unbaked

Instructions

 

  • Poke a few holes in the sweet potatoes with a fork and cook them in the oven at 350 degrees for 1 hour. Let them sit for at least 15 minutes to cool and then remove/discard the skin. Mash the pulp in a large bowl. In this bowl, add butter, eggs, milk, sugar, honey, vanilla, and spices. Use an immersion blender or beater to mix the filling until smooth.
  • Pour this mixture into the pie crust and sprinkle some more cinnamon over the top. Line with pecans and bake in oven at 350 degrees for about 1 hour or until a toothpick comes out clean.
