One Pot Creamy Mushroom Chicken
Ingredients
- 1.5 lbs boneless chicken thighs
- 1 bag brussels sprouts halved
- 16 oz cremini mushrooms sliced
- 1 large sweet onion thinly sliced
- 1 cup heavy cream
- 2 tbsp butter
- ¼ cup white wine
- ½ cup Parmesan cheese shredded
- 5 cloves garlic minced
- 1 tsp onion powder
- 2 tsp dried herbs de Provence
Instructions
- In a large skillet on medium heat, saute mushrooms and onions with some oil. Add minced garlic after a few minutes. Once golden, set aside for later.
- Meanwhile, prepare the brussels sprouts. We did this by cooking them in an air fryer at 375 degrees for 15 minutes, flipping once. If not an air fryer, you can cook them in a regular oven at 425 degrees for 25 minutes.
- Trim chicken and season with salt/pepper. In the same pan as before, increase heat to medium-high and cook chicken with some oil. Once chicken is no longer pink on the inside, remove from pan and set aside.
- By now, there should be flavorful, caramelized bits in the bottom of the pan. Deglaze the pan by adding white wine, scraping up the caramelized bits, and reducing by half.
