Gorgonzola & Pomegranate Lamb Burgers
Ingredients
- 8 buns
- 2 lbs ground lamb
- 4 garlic cloves finely minced
- 1 shallot finely minced
- ½ tsp salt
- ½ tsp pepper
- ½ tsp onion powder
- 2 tsp cumin
- 1 tsp smoked paprika
- 2 tsp dried oregano
- ½ tsp cayenne pepper
- ¼ cup pomegranate seeds
- Gorgonzola
- Arugula
Instructions
- In a large bowl, combine ground lamb with the garlic, shallots, and all of the spices, mixing until combined. Divide into 8 equally-sized balls and press each ball into a patty. Use your thumb to make a small indent into the center of each patty (this prevents them from bowing out in the center.
- Cook the lamb burgers. On a preheated grill, this would take about 4-5 minutes on each side. Alternatively you can use the stovetop (we used our cast iron grill pan to get nice sear marks) and cook for 5-6 minutes per side on medium high heat.
- In the last 2 minutes of cooking, top each patty with gorgonzola to allow it to partially melt. When you have finished cooking the patties, toast the buns using the grill or pan (mandatory for a delicious burger!).
- Assemble burgers by placing the burger on the bun with gorgonzola facing-up, top with arugula and pomegranate seeds, and add the top of the bun.
