Chinese Scallion & Shrimp Pancakes
Ingredients
- 2 eggs beaten
- 1.5 cups water
- 1.5 cups flour
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp red pepper flakes
- ½ tsp garlic powder
- ½ lb uncooked shrimp peeled and deveined
- 1 bunch scallions aka green onions
- 1 tbsp sesame oil
Instructions
- Peel and devein the shrimp and cut each into 3-4 pieces. Place all ingredients into a large bowl and mix together. Let batter stand for 1 hour at room temperature.
- In a pan with vegetable oil on medium-high heat, ladle a think layer of pancake mixture onto the pan (you can either make large pancakes that fill up the pan or smaller ones). Make sure to flatten pancake with back of spatula so that the shrimp is in a single layer.
- Cook for 4 minutes or until golden brown, then use a spatula to flip to the other side and cook for another 4 minutes. Can serve warm or room temperature with a dipping sauce made by combining soy sauce, sesame oil, and a pinch of red pepper flakes.
