Chicken Caprese Pasta with Magic Green Sauce
Ingredients
Pasta
- 4 chicken breasts
- 1 box penne pasta
- 2 cups cherry tomatoes
- 1 cup small mozzarella balls
Magic Green Sauce
- 1 bunch cilantro
- 1 bunch parsley
- 1 bunch basil
- 1 avocado
- 3 cloves garlic peeled
- 1 lime juice and zest
- ½ cup cashews
- ½ cup water
- ½ cup olive oil
- Salt/pepper to taste
Instructions
- First, cook pasta according to package instructions, drain, and set aside.
- Meanwhile, place chicken breasts in a medium pot of water and bring to a boil. Cover and reduce heat to low. Let chicken cook this way for about 20 minutes or until the internal temperature reaches 165 degrees (check out our recommended meat thermometer!). Drain and let chicken dry. To get a crispy char on the chicken, you can use a cast iron grill on high heat to briefly sear the outside.
- Now, place all ingredients for Magic Green Sauce into a food processor (alternatively can use an immersion blender) and blend until smooth. Note: you can add additional oil or water to reach desired consistency.
- In a bowl, mix together the pasta, tomatoes, mozzarella balls, and Magic Green Sauce. Slice the chicken and lay it on top. Finally, sprinkle over some freshly-ground pepper and can garnish with some extra basil leaves.
