Chicken Souvlaki Pita with Tzatziki
Ingredients
Marinade
- 3 lbs chicken thighs cut into 1inch cubes
- 1/2 lemon zest and juice
- 4 garlic cloves minced
- 1 tbsp dried oregano
- 1 tbsp minced rosemary
- 3 tbsp olive oil
- 1 tsp salt/pepper
Tzatziki Sauce
- 1 cup Greek yogurt
- 1/2 English cucumber grated
- 2 cloves garlic minced
- ½ lemon juice and zest
- 2 tsp minced dill
- 2 tbsp olive oil
- ½ tsp salt
- 1 tsp black pepper
Other
- 1 tomato chopped
- ½ English cucumber sliced
- 1 red onion roughly chopped
- Skewers
- Pita
Instructions
- Marinate chicken in a bowl in the fridge for at least 2 hours. Meanwhile, prepare tzatziki sauce by combining all ingredients in a small bowl.
- Preheat barbecue. Thread chicken and red onion on skewers, alternating between each. Barbecue skewers until chicken is no longer pink inside.
- Arrange sandwiches by opening a pita, placing chicken/onions, then tomato/cucumbers, topping with tzatziki, and sprinkling some freshly cracked pepper.
