Creamy Garlic Salmon Florentine
Ingredients
- 1 salmon fillet cut into portions
- 2 cups spinach
- 1 sweet onion diced
- 1 red bell pepper sliced
- 1 package cremini mushrooms
- 4 cloves garlic diced
- 2 tbsp butter
- ¼ cup flour
- 1.5 cups half and half
- ½ tsp nutmeg
- ¼ tsp cayenne pepper
- Dried parsley to top
- Salt pepper, to taste
Instructions
- Set a pan on medium-high heat with some oil. Place salmon fillets in pan, skin-side-up and sear for about 4 minutes. Flip so they are now skin-side-down and cook until flaking, about another 4-6 minutes. Set aside.
- Saute mushrooms and set aside when golden. In the same pan, saute onions and bell peppers with garlic and butter on medium heat until golden. Mix in the flour with these veggies in the pan and then pour in half and half.
- Add spinach leaves and cooked mushrooms and let wilt in the sauce for a minute before stirring in the nutmeg, cayenne and salt/pepper. Next, add the salmon filets skin-side-down and let simmer on low heat for another 10 minutes, occasionally basting.
- Serve salmon florentine warm.
