Dark Chocolate Coconut Avocado Ice Cream
Ingredients
- 3 cups 2% milk
- 2 avocados
- 3/4 cup white sugar
- 1 cup unsweetened cocoa powder
- ½ cup dark chocolate bar roughly chopped
- ⅓ cup unsweetened coconut shavings
- 2 tsp vanilla extract
Instructions
- Note: this recipe requires an ice cream maker (here is the one we recommend). Place ice cream freezer bowl in freezer until frozen (aka you can’t hear liquid when you shake it). Place all ingredients except chocolate chunks and coconut flakes in a bowl and blend thoroughly with an immersion blender or hand-mixer.
- Pour into ice cream bowl and turn on ice cream maker. After 30 minutes, add in the chocolate chunks and coconut and keep the machine on for another 5 minutes.
- When thick and creamy, can serve fresh and save the rest in a freezer-proof container.
