Fall Turkey, Butternut Squash, & Potato Stew
Ingredients
- 1 lb ground turkey
- 1 butternut squash peeled and cubed
- 2 potatoes cubed
- 1 onion chopped
- 1 can kidney beans
- 1 can garbanzo beans
- ½ tsp salt
- 1 tsp pepper
- 2 tsp turmeric
- 2 tsp cumin
- 1 tsp cayenne pepper
- 1 tsp chili powder
- 1 tsp oregano
- 1 tsp thyme
- 1.5 cups chicken stock
Instructions
- Cook the turkey on medium-high heat on the stove until browned. Drain the liquid and place turkey in a slow cooker along with the remaining ingredients. Mix everything together and cook on low for 6-8 hours. Can garnish with extra thyme.
