Goat Cheese, Egg, & Asparagus Tart
Ingredients
- 1 roll puff pastry dough
- 1 bunch asparagus
- ½ cup goat cheese
- ¼ cup Parmesan cheese
- 3 eggs
- garlic salt
- dried parsley for garnish
Instructions
- Preheat oven to 400 degrees.
- Roll out puff pastry dough so that the width is slightly larger than the length of asparagus. With a knife, score a rectangle in the dough to create a crust (but don’t cut all the way through). Place on a baking sheet. Brush the outer edges with either melted butter or an egg wash.
- Place in oven for 10 minutes and meanwhile wash and trim asparagus. Toss asparagus with some oil and garlic salt and cook separate from pastry dough for 10 minutes.
- Add goat cheese to the inside rectangle of the pastry dough, then asparagus, then Parmesan cheese. Crack over three eggs and then top with some pepper.
- Cook in oven for about 20 minutes or until egg whites are cooked through. Sprinkle over some parsley for garnish.
