Hawaiian Chicken Kebabs
Ingredients
Skewers
- 5 chicken breasts cut into 1-2 inch cubes
- 1 pineapple cored and cut into cubes
- 1 green bell pepper cut into cubes
- 1 red bell pepper cut into cubes
- 1 red onion cut into cubes
Marinade
- ⅓ cup ketchup
- ⅓ cup brown sugar
- ⅓ cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp minced garlic
- 1 tbsp minced ginger
- 1 Fresno pepper minced
Other
- Skewers
- 1 bunch green onions sliced
- 1 lime
Instructions
- Whisk together all ingredients for marinade. In separate large bowl, add chicken cubes, bell peppers, onion, and pineapple. Pour ¾ of the marinade (reserve the rest for later) into this bowl and let marinate, covered, in the fridge for at least 1 hr.
- Preheat grill to medium heat. Skewer the chicken, peppers, onions, and pineapple in an alternating pattern. Grill skewers until chicken is no longer pink inside.
- Rub the remaining marinade (that you previously set aside) on the skewers, top with sliced green onions, drizzle with lime, and serve warm. Can add some red pepper flakes if you prefer more spice.
