Mediterranean Stuffed Mushrooms
Ingredients
- 16 oz package white button mushrooms whole
- ½ cup olives diced
- ½ cup diced red bell pepper
- ½ cup diced sweet onion
- ½ cup crumbled feta
- 2 cloves garlic minced
- ½ tsp salt
- 1 tsp black pepper
- 1 tsp Italian herbs
- 1 tbsp olive oil
Instructions
- Preheat oven to 425 degrees. In a large bowl, combine all ingredients except mushrooms and mix thoroughly. Remove stems of mushrooms and lay mushrooms on a foil-lined baking sheet (you can dice and reuse the stems for a different recipe).
- Spoon some of the filling into each one of the spaces where the stems were. Bake for 15-20 minutes or until the tops of the fillings start to crisp. Serve warm.
