Ingredients

  

  • 16 oz package white button mushrooms whole
  • ½ cup olives diced
  • ½ cup diced red bell pepper
  • ½ cup diced sweet onion
  • ½ cup crumbled feta
  • 2 cloves garlic minced
  • ½ tsp salt
  • 1 tsp black pepper
  • 1 tsp Italian herbs
  • 1 tbsp olive oil

Instructions

 

  • Preheat oven to 425 degrees. In a large bowl, combine all ingredients except mushrooms and mix thoroughly. Remove stems of mushrooms and lay mushrooms on a foil-lined baking sheet (you can dice and reuse the stems for a different recipe).
  • Spoon some of the filling into each one of the spaces where the stems were. Bake for 15-20 minutes or until the tops of the fillings start to crisp. Serve warm.
