Roasted Thai Salad with Peanut Dressing
Ingredients
Salad
- 10 oz kale
- 5 oz spinach roughly chopped
- 1 bunch green onions chopped at a diagonal
- 1 cup snow peas
- ½ cup shredded carrots
- ½ cup edamame
- 1 yellow bell pepper sliced thinly
- ½ cup roasted peanuts
- ½ cup chopped cilantro leaves
Dressing
- ¼ cup peanut butter
- 2 tbsp rice vinegar
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tsp sesame oil
- ½ tsp red chili flakes
- 1 lime juiced
- ½ tbsp ginger paste
Instructions
- Preheat the oven to 425 degrees. Toss kale with a bit of olive oil and bake on a foil-lined baking sheet for about 15 minutes or until crispy. Meanwhile, prepare the remaining salad ingredients. Make the dressing by combining all ingredients and mixing until combined.
- When the kale is ready, add it to a large bowl along with the kale, followed by the remaining salad ingredients. Pour over however much dressing you prefer, toss, and serve.
