Roasted Thai Salad with Peanut Dressing

This delicious salad combines roasted kale with fresh vegetables and is topped with a creamy ginger peanut dressing.

Ingredients

  

Salad

  • 10 oz kale
  • 5 oz spinach roughly chopped
  • 1 bunch green onions chopped at a diagonal
  • 1 cup snow peas
  • ½ cup shredded carrots
  • ½ cup edamame
  • 1 yellow bell pepper sliced thinly
  • ½ cup roasted peanuts
  • ½ cup chopped cilantro leaves

Dressing

  • ¼ cup peanut butter
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tsp sesame oil
  • ½ tsp red chili flakes
  • 1 lime juiced
  • ½ tbsp ginger paste

Instructions

 

  • Preheat the oven to 425 degrees. Toss kale with a bit of olive oil and bake on a foil-lined baking sheet for about 15 minutes or until crispy. Meanwhile, prepare the remaining salad ingredients. Make the dressing by combining all ingredients and mixing until combined.
  • When the kale is ready, add it to a large bowl along with the kale, followed by the remaining salad ingredients. Pour over however much dressing you prefer, toss, and serve.
