Triple Berry Cobbler Topped with Almonds
Ingredients
- ½ cup sliced almonds
Filling
- 1 cup blackberries
- 1 cup blueberries
- 1 cup raspberries
- 2 tbsp corn starch
- Juice from ½ lemon
- 2 tbsp honey
- 1 tsp vanilla extract
Batter
- 1 cup flour
- ½ cup quick oats
- ½ tsp nutmug
- 1 tsp baking powder
- ½ tsp salt
- 6 tbsp butter cut into small cubes
- 1/4 cup white sugar
Instructions
- Preheat oven to 400 degrees. In a bowl, combine berries and corn starch and let sit. In another bowl, combine the batter ingredients and mix together with your fingers until it resembles a coarse dough. Add lemon, honey, and vanilla extract to the berries and add berries to cast iron skillet.
- Cook until the mixture starts to come apart and boil. At this point, spoon over the batter in dollops and place in oven for 15 minutes. Top with almonds and bake for another 5 minutes. Can serve warm with ice cream.
