Watermelon Arugula Salad
Ingredients
- 1/2 small seedless watermelon
- 6 cups arugula or mixed greens
- 6 oz crumbled feta cheese
- ¼ cup balsamic vinegar
- ½ tsp black pepper
Instructions
- Cut watermelon into 1-inch cubes and toss with the greens and feta in a large bowl. Add balsamic vinegar to a pan and place on medium-low heat until volume has reduced by half and starts to become sticky. Use a spoon to drizzle this over the salad and top with fresh pepper.
