Coconut Macadamia Nut-Crusted Salmon
Ingredients
- 1.5 lbs salmon fillet
- ½ cup macadamia nuts
- ½ cup panko bread crumbs
- ¼ cup coconut flakes
- 1 tbsp dried parsley
- 1/2 tsp salt
- 1 tsp black pepper
- 2 tbsp butter melted
Instructions
- Preheat oven to 375 degrees. Pat salmon fillets dry, coat with olive oil, and place on a foil-lined baking sheet.
- In a food processor, add macadamia nuts, panko, parsley, salt, and pepper. Process until a coarse mixture. Mix in melted butter and parsley.
- Spoon this mixture over the salmon and cook in oven for 20 minutes (depending on the thickness of your salmon) or until fish easily flakes.

it was delicious with steamed buttered Asparagus spears, cut the tougher stems off about halfway the size of the stalk. The fish was flaky not overcooked but i cooked it fifteen more minutes a total of 45 minutes at 375 degrees.
