Chicken Satay with Peanut Sauce
Ingredients
Marinade
- 2.5 lbs chicken breast sliced into strips lengthwise
- 1 can coconut milk
- 1 tbsp curry
- 1 tbsp cumin
- 1/2 tbsp turmeric
- 1 tbsp garam masala
- 1 tsp salt
- bamboo or metal skewers
Peanut Sauce
- ⅓ cup peanut butter
- 2 tbsp soy sauce
- ¼ cup water
- 1 tsp garlic powder
- 1 lime juiced
- ½ tsp red pepper flakes
- 3 tbsp peanuts crushed
Instructions
Chicken
- Combine all marinade ingredients. Thread chicken onto skewers and place in a baking dish. Pour over marinade and coat evenly. Let marinate in the fridge for at least an hour.
- After marinating, oil grill grates, preheat grill on medium-high heat, and then grill the skewers for about 10-15 minutes or until no longer pink inside.
Sauce
- Meanwhile, make peanut dipping sauce by combining all ingredients except peanuts in a small bowl and mixing thoroughly (you can add more peanut butter or water to get desired consistency).
- Bring a small pan to medium heat on the stove (without oil) and add peanuts. Toast for about 2 minutes or until slightly browned. Top the sauce with these peanuts.
