Garlic Cilantro Naan

Our favorite way to prepare this classic North Indian side dish

Ingredients

  

  • 1 cup all-purpose flour
  • 1 cup wheat flour
  • ½ tsp salt
  • 1 tsp sugar
  • ½ tsp baking soda
  • ½ cup Greek yogurt
  • 2 tsp mustard seeds
  • 3 garlic cloves minced
  • 2 tbsp butter
  • ½ bunch cilantro leaves chopped

Instructions

 

  • In a large bowl, combine the yogurt and baking soda and let sit for a few minutes. Mix together the salt, sugar and flour. Knead the dough, gradually adding warm water until the dough is elastic and springs to the touch. Coat the dough in olive oil, cover bowl with a damp towel, and let rise for about an hour. Briefly knead again and then divide into equal size pieces, occasionally sprinkling with flour. Let rest another 30 minutes.
  • Roll each piece into flat ovals and press mustard seeds and cilantro onto the top surface of each. In a small pan, melt butter and toast garlic with some olive oil, keeping pan on the lowest setting to keep it liquid. In a hot cast iron skillet, cook naan, cilantro-side-up until golden. Next, broil them (again, cilantro-side-up) until golden. While still hot, use a brush to coat the garlic/butter mixture on top. Serve warm.
