Homemade Tagliatelle with Smoked Salmon Sauce
Ingredients
Pasta
- 10 oz all-purpose flour
- 4 egg yolks
- 2 whole eggs
- 1 tsp kosher salt
Other
- 1 package smoked salmon
- 1 tbsp capers
- 1 lemon
- 1 tsp black pepper
- 1 tsp dill
- 3 cloves garlic minced
- 1 tbsp Parmesan cheese
Instructions
- Pour flour and salt onto a clean work surface and make a well in the center. Place the eggs/yolks in this well and mix with a fork. Swirl the fork concentrically, slowly incorporating the flour into the eggs.
- Once it forms a dough, knead it for 10 minutes, form it into a ball, and let rest for 30-60 minutes. Now cut dough into four even sections, shape each into a thin rectangle/oval, and run it through the pasta maker starting with level “0” and up to your desired thickness before running it through the pasta cutter.
- Add pasta to a pot of boiling water and cook for 1-2 minutes, continuously checking for desired doneness. Drain pasta and add smoked salmon, black pepper, dill, capers, garlic, olive oil. Drizzle lemon juice on top and top with Parmesan cheese. You can garnish with a basil leaf.
